So, what did you do this weekend??
I spent most of my weekend in the kitchen. I had lots of cucumbers to transform into pickles of some sort. I, also, had a sink full of green peppers and jalapenos. But more important than the vegies from the garden our snack cabinet was EMPTY! Well, my kiddos think the snack cabinet being empty is more important than those peppers and cucumbers! My first task of the weekend was to restock their snacks. Many of you know that I prefer homemade snacks in our little cabinet instead of store bought which is FULL of preservatives and other stuff. So, I what did I make.....chocolate chip cookies, oatmeal cookies, granola bars and popped popcorn with salt and butter of course. Then it was pickle time! I canned 5 half pints of jalapenos, 8 pints of Cajun dill pickles, 8 pints of sweet pickle.That was all Saturday...
Yesterday, I still had jalapenos left so I diced and placed 4 cups of jalapenos into the freezer. I diced and put 9 containers of green peppers (3/4 cup each) in the freezer. Boy will those come in handy this winter for the hubby's freezer breakfast bagels/burritos and for soups. I,also, managed to make a batch of mini banana muffins for my little muffin boy! Believe it or not I still have cucumbers left.....not sure what I will be making with them.
So today will be slower paced? Well, maybe but probably not! I am planning on vacuuming out and cleaning up my van. Tell me how in the world that van gets so darn dirty!?! One word....KIDS! I, also, plan to De-frost my deep freezer before I store away much more garden goodies out there and so I can know what exactly is out there. Yes, I will be taking inventory! :) So, I better get busy.... sitting on the computer is NOT getting any of my to-do's done.
